i always concede to authoritative sources (even concise ones), and you've convinced me that we can indeed write 'emmenthal'. If it's ok with you, i shall continue to spell it 'Emmental' as this is how most people from the Emme valley write it, and indeed, i think 'valley' in modern German is 'tal', not 'thal'.
