if i have a tournedos for example, i put it in a really hot pan for about a minute so the outside is almost burnt. But the inside stays perfectly raw (yet warm).
Ideally, you put the steak in a bag, seal it, and put it in a pan of boiling water until the temperature reaches 60°, then stick it on a griddle to get the outside to 120 and serve.
