I had a brilliant overcoooked tuna experience once

Doing a trial in Manchester and staying for a fortnight at what passes in Manchester for a smart hotel. Menu on a three day cycle. After getting leathered tuna the first time, the second time I looked the northern monkey waiter in the eye and said "I want it pink in the middle. Understand? Not overcooked. Not brown. PINK." Tuna arrived. "Wait there, youth" I said, and cut it open for inspection. Solid beige the whole way through. "Don't worry sir", says the monkey. I'll take it back to t'kitchen and ask Chef to make it a bit more pink for you." Fuckoilarrrrff.
