Saddle of rabbit, wrapped in a stretch of marlin skin, hung with sweetbreads and floating

in a frisee of tzatziki, celery and butternut squash. Accompanied by a small twisty of horse, lazy Susan and chitlings.

Served with a side skillet of Buffalo brie and a masquerade of berry compote.
