Number of tests:

Check that the paper feels right, check the watermark, check that some of the letting is embossed, and the never once let me down behind the bar and I found a few forgeries let me tell you number one acid test, rip it gently near the metal strip - you shouldn't be able to tear the strip itself ('cos it's metal, duh). If you can tear it just as easily as the paper, then it's just printed on and it's a fake.
