But my impression was that it farms opinion from people watching as to what counts as a chance, who the people involved are, what their positioning is... Etc etc

Lots of what gets fed in is opinion - hence why different companies produce wildly differing xG values.

It's not drawing it in from raw data (AFAIK).

The variability of the data bunged in limits its usefulness imo.
