I've found Canons to be super reliable, mine basically never breaks down, and you can get decent quality ink that the printer mistakes for genuine canon on Amazon. The one I've got probably isn't available any more but if you look at Canons you'll get an idea. Scan quality is good too. My previous printer was also a Canon and I got my Mum one as well.
When you install the drivers it will try to install a ton of other software. You simply don't need any of it. The one thing you need is the IJ scanner utility which you can download separately later.
My experience with HPs is they always break down eventuallt and Epson just looks too flimsy but I could be unlucky on the first count and wrong on the second, never owned an Epson.
