Ours did something similar

Working cocker. Would go fruit loop, running around the place, not settling. But he then deteriorated v rapidly over a few days with incontinence etc. it was more than extreme than than what yours sounds as he was at it through the night too.

Vet couldn’t find a cause, we assume it was something neurological. The mad eyes still stick in my mind, the poor bugger.
