As I understand it, mutations tend to move towards less deadly versions

viruses that kill their hosts can't survive and reproduce, thus defeating their own "purpose", so usually, the most "successful" viruses are those that are more benign.

This on a purely survival of the fittest basis of course as viruses aren't even strictly "alive" as such
