We tried multiple geese once and it was a nightmare!
Top tips - (a) check your oven is physically big enough (though being an NLP presumably you have some giant steam oven) and (b) do stacks of side dishes so that the turkey isn’t the star on the plate - by the time you’ve carved down to the very middle it could be getting a little pink and so it’s better to be able to do just a few slices per plate in the knowledge that there’ll be lots of sausages/stuffing/baked oysters/whatever to fill the plate
And LOTS of gravy
