Prawn and Parmesan Crumbles – a very quick and scrummy starter
Serves 4
200g (8oz) cooked and peeled prawns
250g (1/4pt) double cream
1 teaspoon Dijon mustard
2 teaspoon chopped fresh parsley
Freshly ground black pepper
Little salt
Topping:
6 tablespoons fresh brown breadcrumbs
4 tablespoons Parmesan cheese
1 /4 teaspoon cayenne pepper
1. Mix together prawns, cream mustard parsley and seasoning. Divide between 4 lightly buttered ramekins
2. Mix together topping ingredients and pile on top of prawn mixture, pressing down lightly
3. Cook in oven 180C/350F/gas mark 4 for 15 minutes or microwave 2 dishes at a time on full power for 1 minute and finish under a hot grill to crisp the top.
