I would imagine most Remainers, if forced to choose a Leave option, would want the Deal. But Remain is likely to be one of the top 2 choices after the first round of counting so their second preferences wouldn't matter.

Deal is likely to be the one that gets eliminated, and I would expect there to be more Europhobes in the Deal category than Europhiles, so their 2nd prefs will see No Deal home.

However if you were able to add the Remain 2nd Prefs to the original Deal votes, that's likely to beat No Deal.

Your 3-way STV is going to see No Deal romp home and it's unfairly biased towards a leave vote generally as ultimately you have 1 Remain vs 2 Leave options, and it completely disenfranchises the Remain voters from having a say in what form Leave takes.
