I wouldn't arrange any "tight" connections as there can be delays (passenger trains run on lines owned by freight companies and freight takes precedence)
For overnight trips it is worth going for a sleeper but the roomette is pretty good so don't have to pay for a bedroom. Recliner seats are cheaper but not sure I could do it.
We booked all well in advance, most sleepers were really full, including the recliner seats. Not sure what scope there is to turn up and go. Day trains better, we got train from NY to Niagara and there were seats available.
Long distance sleepers can be done with journey breaks but each leg has to be booked separately.

Definitely worth it, real experience and great way to see plenty.
