Profit and price.

We all want all the things we want and we all want them cheaper.
Hence business/industry constantly driving down costs.
Easiest cost to reduce? The wage bill.

So ultimately a degree of responsibility will always be on us as consumers to avoid making price the only driver of consumption.

The other factor is profit levels obvs.
Point being its not as simple as one thing, many things heave lead to a reduction in these sort of jobs.
IMHO anyway.
