If the jobs were not available then Mexicans would not cross the border.

Another not so secret job is construction.
They wait outside a Home Depot (think B&Q or Home base)
Builders will pick them up for a days work. All cash.

Again, all horrible jobs in the hot sun that Americans mostly don't want to do even for twice the money.
