If it's denominated in a different currency there will usually be a transaction charge "to cover the costs of changing the money" (read: the better to rip you off with). However usually once that's been applied, the debt appears on the date you spent the money and as long as you clear it off before the payment due date there would be no interest payable (on virtually all credit cards - though some will charge you daily if you take cold hard cash out of an ATM).
In past lives I've travelled extensively with work and it's always worked like that, and worked just fine. In practice even with the tx charge the exchange rate you get isn't at all bad (never, ever change money at an airport, though you probably know that already - almost always better to use your debit card in a foreign ATM).
