The contractors are silly too, conceding liability rather than involving their insurers, who's place it would be to do so. They very well may have prejudiced their own position with their insurers.

As for your position, if they don't agree to fully recompense you then you'd have no alternative to take legal action.

Make sure the property owner is notified - water damage can cause all sorts of problems to electrics, plasterwork, woodwork which isn't always noticeable initially.
