I love the stuff, it doesn't have a strong flavour

hard to describe really.
personally I love it in curries as it gives a hint of fishiness without being overpowering and soaks up the flavours well.

I'm also quite partial to it in Peruvian-style ceviches.
I've slavering like a maniac now
