Well it might have changed since i did catering...

but if you got dreadful Hygeine rating they'd give you two weeks to sort it out or you'd get shut down. It's a bit unfair that they don't state if the improvements were made.

Plus, something like having a sink in the wrong place would mean you'd get a poor rating, not necessarily an infestion of mice and ants.
