I'd second (or third) the suggestion of Prague, from you're list we've done Paris and Rome

And loved both.
There will be Tourists in both obv but that doesn't need to be an issue as you're tourists too!

Missus got her glasses nicked from her bag in Rome but to be fair we were a little naive then, wouldn't happen now.

I think i preferred Paris overall, loved the 'old city' aspects of Rome, Paris felt a bit more complete though.
If you go to Paris there is an excavation of the old city under Notre Dame, looks like a subway entrance from the outside when we were there. Hardly anyone went in but it was really interesting.
