What you’re doing is sensible.

From what I can see from my ivory tower, it’s a common approach.

My solution. Do everything we can to keep schools as open as possible until Friday. Call Easter holiday a week (and a bit) early. Gives over 3 weeks to assess. Make a decision about extending the closures during that time.
