Recipe
'greeds:
- white stuff: shallots if you're posh but I just used an onion; shrooms; watercress; baby spinach; rocket; garlic, lemon, dill, creme fraiche.
- fishy stuff: salmon, filleted (or DIY)
- pastry stuff: filo (always used puff before; this is so much better)
Method: veg oil + knob of butter, heat till butter foams, onions in for 2-3 mins, slice shrooms and bung em in till the liquid from them has gone and they're brown and small, squash and roughly chop garlic, add juice of a lemon and it will evaporate fast too, then add the greens and the dill and wilt them. Take off the heat, put in a bowl, add creme fraiche, stir it all around, in fridge until cold (not cool - cold).
Then take filo, 4-6 sheets on the bottom, do this a sheet at a time, brushing a little olive oil or melted butter between each sheet. Then arrange salmon on top of top sheet of filo. Spoon white stuff over. One more sheet of filo on top. If you're a ponce take yet another sheet of pilo and mess it up a bit and pop it on for decoration and s**t. 200/180 fan for 20-25 mins or until done.
Tastes like it's a lot more work than it actually is.
