The food hygiene ratings can be a little misleading

I know of an establishment had a visit from food standards agency. They wanted to see some documentation that the staff could not locate (the owner had put it in a safe for safe keeping ironically). As such they got marked low. Another example was a restaurant that had the boiler pack up the day food standards visited. No hot water available so again, low rating given. Apparently it's not easy to get them back out to re appraise after issues have been fixed either.
