Insoles are sorbothane, and the baselayers I use are by canterbury.

I use the "full strike" insoles, but you can get ones which are just heel or just ball-of-the-foot pieces, I think.
And for the base layers you can get "wear when its warm to keep cool" and "wear when it's cold to keep warm". I have a couple of each type. They're good, but you can feel a bit of a tool when pulling them on/off - they're a bit like a upper body condom.
